Lamb Tri-tip Sandwich

When we used to have a storefront in town, we would make different sandwiches each day and this is one that we will never forget. Then sandwich is made from the sirloin roast and the flavors melt together deliciously. It will make anyone become a fan of lamb… trust us!

Ingredients;

  • 1 Emigh lamb sirloin roast

  • 1/2 yellow onion

  • 5 tbsp salted butter

  • 1/4 cup Pesto (homemade or store bought)

  • 2 tbsp Mayonnaise

  • Beemster cheese

  • 4 Sweet buns

  • Rosemary garlic seasoning

Directions;

Season sirloin roast with rosemary garlic seasoning and cook to medium rare. We seared ours in a cast iron skillet and then finished it in the oven. Barbecue would work great as well. Let rest for 5 minutes once cooked, then slice lamb into strips. Melt butter in a skillet and add in sliced onions, cook on low stirring occasionally until the onions get to a golden brown color. About 20 minutes. Mix your pesto and mayonnaise together while your onions cook down.

Time to assemble! Slice your sweet roll in half, spread pesto mayo on both sides. Add beemster cheese on top bun and broil in oven until the cheese is melted. Place sliced lamb tri tip on the bottom of the bun. Add caramelized onions on top of the lamb tri tip. Once your cheese is melted put your sandwich together, slice in half and enjoy!
