Mini Meatballs

We use our ground lamb just as we would ground beef. These mini ground lamb meatballs are an easy go to dinner that will make the whole family happy!

Ingredients

• 1 lb package ground lamb

• 1/2 tsp salt & pepper

• 1/2 tsp onion powder

• 1/2 tsp garlic powder

• 1/4 tsp paprika

• 1/4 cup Italian style breadcrumbs

• 2 tbsp grated parmesan cheese

• 1 egg

• 3-4 leaves fresh basil

• handful fresh parsley

Directions

Heat 2 tbsp olive oil on the stovetop. Add all dry seasonings, egg, and Parmesan cheese to a bowl with the ground lamb. Mix well with your hands. Roll into golf ball size meatballs. Place in pan and cook for 2-3 minutes then cover with a lid. Cook for another 3 minutes. Remove lid and flip meatballs (you’ll notice a flavorful, dark, crispy bottom when flipping). Cook for the last 3 minutes, drain excess oil, add in your favorite red pasta sauce, fresh chopped basil and fresh chopped parsley. Serve hot over your favorite pasta noodle!
